Today, we wanted to share another one of our favorite low carbon footprint recipes to help you keep making your way through 2021 with sustainability on the brain—and on your table—a Vegan Nut Roast. This dish also makes an amazing Meat Free Monday staple, too!
You’re going to need:
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 ½ cups vegetable stock
- 1 tbsp flour
- 5 button mushrooms, halved and sliced
- 3 cups of breadcrumbs
- 1 tbsp soy sauce
- ¼ tbsp each of dried oregano, dried thyme, dried rosemary
- 1 ½ cups of raw nuts, ground
- salt
- pepper
- 2 tbsp oil (vegetable or olive) and extra, for basting
